Grading black teas 紅茶

S= super F= fine/finer T= tippy G= golden F= flowery O= orange P= pekoe (OP) Orange Pekoe pronounced 'Peck-o', is a whole leaf tea. Orange Pekoe is just the name and has nothing to do with oranges or orange flavor. These leaves are usually of uniform size and rolled lengthwise. (TGFOP) Tippy Golden Flowery Orange Pekoe -- is the top two leaves and tip. The tip or bud is a immature leaf tip which is not yet fully opened. When harvested the tips appear golden, hence the grade 'Flowery'. When these tips are in abundance the terms 'Tippy and Golden' are also attached. Sometimes the number '1' or '2' may be placed at the end to designate better grades among similar teas. (FTGFOP) The letter 'F' may appear before the TGFOP to designate a 'finer' grade. (SFTGFOP1) The letters 'SF' designates a grade of 'super fine.' Thus is a Super Fine Tippy Golden Flowery Orange Pekoe - grade 1. =========================================...

Matchmaker tea and food

Pairing foods and tea. My ideas. One method follows the character of tea: green tea fish, oolong Chinese food, black tea meats, puerh spicy foods. Another method is time of day: morning green, mid-day oolong , afternoon black, evening puerh . these are just rough ideas
